The National Resources Defense Council recently stated: “America does not eat 40% of its food. If the United States went shopping, it would leave the store with five bags and drop two in the parking lot. And leave them there. Seems crazy, but we do it every day.” What’s going on with waste in our food system? Come together at the new City Market South End location to learn about the issues and find out how you can make a difference.

The evening will start with cooking demos in the newly built City Market Community Teaching Kitchen. City Market Executive Chef Michael Clauss and Shelburne Farms Inn & Restaurant Executive Chef Jim McCarthy will show you how to turn food typically relegated to the trash or compost into delicious items you’ll want to eat!  A representative from Chittenden Solid Waste District will be on hand to answer all your composting questions, too.

At 6:30, we’ll settle in to view the first Burlington screening of WASTED! The Story of Food Waste. This newly released film aims to change the way we buy, cook, recycle, and eat food. Through the the eyes of chef-heroes like Anthony Bourdain and Dan Barber, we’ll see how the world’s most influential chefs make the most of every kind of food, transforming what most people consider scraps into incredible dishes that create a more secure food system. WASTED! exposes the criminality of food waste and how it’s directly contributing to climate change and shows us how each of us can make small changes – all of them delicious – to solve one of the greatest problems of the 21st Century. We’ll wrap up the evening with a short Q&A.

All proceeds from the evening will benefit Jr Iron Chef VT, a statewide culinary competition that challenges teams of middle and high school students to create healthy, local dishes that inspire school meal programs, so students understand how they can effect change in the food system. When purchasing your ticket, you’ll have the opportunity to donate an additional dollar amount to the program. To show our appreciation, we’ll have special gifts at the event for every guest that makes a donation.
